Grilled Fish with Caramelized Onions and Candied Carrots
I usually make a seafood dish on days when I am low on groceries. Today was one of those days. I had one onion, a few carrots, and a box of roni to work with. My father provides the fresh catch when he visits, which makes the omnivore in the family happy. And, I don't have to buy meat, which makes me happy.
The side dishes included candied carrots and caramelized onions. I usually do not make sides, opting for one-dish meals. So, I chose two easy recipes. The carrots, with their brown sugar, were a big hit. I used a Good Housekeeping recipe for them. For the onions, I simply threw them in a baggie with a tablespoon of olive oil to coat. When the grill was hot, I threw the onions on and let them caramelize.
